EZ Veggie Grilling Tips

Now that temperatures are rising, it’s time to move the kitchen outside. Take advantage of all that the season has to offer with fresh grilled vegetables. From asparagus and eggplant to artichokes and zucchini, they’re all delicious on the grill.

Here’s a quick and easy way to prep asparagus for the grill. After washing and snapping off the ends, place in a plastic zipper bag with extra virgin olive oil, sea salt and pepper, then massage to coat. You can also use this technique with marinades and sauces, for both meats and vegetables.

Kabobs are a great way to grill vegetables. Simply slide chunks of your favorite vegetables onto skewers for a fabulous, colorful and healthy side dish. When selecting vegetables for kabobs, look for those with similar cooking times, or cook those requiring more time on separate kabobs. Enjoy!
