Flounder with Vegetables

18 thin asparagus spears
3 teaspoons unsalted butter, divided
1 small onion, sliced
1 small yellow pepper, seeded and sliced
1 small red pepper, seeded and sliced
6 6-ounce flounder or sole fillets
Salt and pepper to taste

1. Preheat oven to 350˚F. Oil shallow baking dish large enough to hold fish.

2. Steam asparagus over boiling water until tender-crisp, about 5 minutes. Drain in colander under cold water. Melt 1 teaspoon butter in a nonstick skillet and sauté onion and peppers until soft.

3. Arrange fish fillets on a work surface. Divide onion-pepper mixture among fillets. Lay 3 asparagus spears crosswise on each fillet and roll fillets around them. Tie with kitchen twine or secure with skewers or toothpicks and arrange in a single layer in dish. Season with salt and pepper.

Bake for 15 to 20 minutes and serve.
