Chicken Yakitori

4 chicken cutlets
1 green pepper
1 red pepper
1 yellow pepper
1 Spanish onion
1/4 cup soy sauce
2 tablespoons vegetable oil
1 teaspoon minced fresh ginger
1 teaspoon sugar
1 garlic clove, minced


If using wooden skewers, soak in water for 20 minutes. Slice chicken, peppers and onions into 1 x 1 inch cubes. In a shallow pan, combine chicken cubes with peppers, onions, soy sauce, oil, ginger, sugar and garlic. Refrigerate for 1 to 4 hours or longer. Weave marinated chicken, peppers, and onions onto skewers.

Preheat the broiler. Place a rack in a shallow baking pan. Broil the skewers about 4 to 5 minutes on each side, or until chicken is tender. Can also be cooked on grill outside.

Serve on a bed of steamed rice
